One of my Sunday School classmates received a gift of my muscadine jelly as part of our annual Christmas party and he told me yesterday in class that he really enjoyed it for his breakfast.
We got to talking about it and I mentioned to him that I had made a large batch of muscadine syrup to go on pancakes and whatnot but it came out too thin to really use. I mentioned I was likely to rework it and make more jelly out of it but he recommended that I add tapioca to it to thicken it up. I thought for a second and it seems like a good idea so, I'm gonna do that to a jar or two and see what happens.
I'll be sure to report the results here but, has enyone else encountered/used this suggestion/technique? If so, how well did it work for you?
