Any opened chunks of cheese that you have, wrap them in aluminum foil, this will keep the cheese longer and prevent molding.

Being a military family for a fifth of a century, we have always frozen cheese of all types. The trick is to thaw it out gradually in the refrigerator. Even blue cheese, my favorite.
