For emergency food storage, consider quinoa (keen-wa). Apparently, it's a complete protein. We just discovered it in the last year (where the heck were we hiding?) and have been using it since. Cooked, it looks a bit like sprouted alfalfa. It really has no taste, so can be added to anything and will pick up the taste of what it's added to. At any rate, it's supposed to be an ideal food source in tough times.
