I haven't done the reconsititution thing yet, but I will try it out this weekend when I have a little more time.

Have you done any more work with dehydrated eggs? This post caught my eye. We have chickens and sometimes have a surplus of eggs. Encountered any problems with reconstitutiong, storage or dehydrating?

I've dehydrated 18 eggs (so far), sort of a test.

I broke an egg, stirred it up, and put it into an aluminum foil boat. I put the boat in the dryer and came back the next day. It was golden color and stiff like peanut brittle. I put it into the blender and made a nice powder and put it into a container and put it into the freezer.

I chose the freezer just to put it somewhere. It doesen't need refrigeration and can be stored for a long time.

1 cup of powder equals 6 eggs and can be reconstituted with 1 cup of water, or two tablespoons powder and three tablespoons of water for 1 egg.
